Recipe – Stephanie’s Sweet Potato Pie

A holiday favorite - Sweet Potato Pie

5 medium sweet potatoes

1 whole nutmeg

2 tbsps cinnamon

½ tsp of all spice

1 tsp vanilla extract

½ stick of butter

Pinch of salt

¼ cup sugar

¼ cup packed brown sugar

¼ cup of sweeten condense milk

2 tbsps of juice from an orange

2 eggs beaten

2 frozen regular pie crust, thawed.

 

Wash and submerge sweet potatoes unpeeled in boiling water.  Cook until done. Drain water and return to stove top burner to dry all water out of potatoes, only for a few seconds. Peel potatoes and place in bowl. Add next 5 ingredients, grating nutmeg to equal 1 tsp. Mix with hand mixer until smooth. Add sugars and salt, mix. Add milk and juice, mix. Add eggs and mix well.

Heat oven to bake at 350 degrees.

Place sweet potatoes mixture in pie shell evenly.  Smooth top.  Place aluminum foil around edge of crust to prevent burning before the entire pie is cooked. Bake for 45 minutes or until browned on top.

Pie should be completely cooled before cutting. Preferably, cool overnight for easy cutting and a more seasoned taste.
