Yummy Almond Joy Bars taste better when they are home made.
½ can sweeten condensed milk
1 tsp vanilla extract
½ stick of butter not margarine
1/8 tsp salt
2 1/4 cups confectioners’ sugar
14 ounces sweetened flaked coconut
1 pkg whole almonds
16 ounces milk chocolate rounds or coating chocolate
Place coconut, sugar and salt in bowl and mix. Cut in butter, then add vanilla extract and milk. Line cookie sheet with parchment paper and shape mixture into desired size bars placing on cookie sheet. Place in refrigerator for 30 minutes until hardened.
Place chocolate in a microwave bowl and microwave for 30 seconds. Stir until chocolate is melted (if not completely melted microwave another 15 secs). Do not allow it to get hot. Remove from microwave.
Line another cookie sheet with parchment paper. Remove bars from refrigerator and place 1 almond on top of each bar and with a fork dip 1 at a time into chocolate until well coated. Place on prepared parchment paper. Chocolate will harden fast and will need to reheat in microwave periodically as you dip.
*Depending on size could yield 18 bars.
